Pumpkin Spice Overnight Oatmeal by Dizzy Busy and Hungry
This Pumpkin Spice Overnight Oatmeal is made with steel cut oats and pumpkin puree. It takes about 10 minutes in the evening to put all the ingredients together, and then the crock pot does the rest! Just set the timer on your slow cooker if it has one, or use a separate timer to plug in the power cord, so that you end up cooking the oatmeal for 4-5 hours.
Slightly adapted from The Yummy Life.
- 1 and ¾ cups milk (or substitute any non-dairy milk)
- 1 and ½ cups water
- 1 cup steel cut oats
- ¼ cup pure maple syrup
- ¾ cup pumpkin puree
- 1 and ½ tablespoons pumpkin pie spice
- ½ cup unsweetened applesauce
- 1 teaspoon vanilla
- ¼ teaspoon salt
- pecans or dried cranberries for garnish (optional)
- Combine all ingredients in a large bowl.
- Spray the inside of the crock pot with non-stick cooking spray.
- Pour the mixture into the crock pot.
- Cover and set to cook on low for 4-5 hours.
- In the morning, turn off the crockpot (or turn it to warm), stir the oatmeal, and let it sit for 5-10 minutes to thicken.
- Serve with pecans, dried cranberries, or other garnish.
