💚 Why You'll Love This Recipe

Ready in five minutes, this super easy chipotle cheese dip is perfect to pair with all of your favorite dippers! If you need a quick and satisfying appetizer with just the right amount of heat, this creamy dip is the perfect contender.

The only problem with it is that there are never any leftovers to enjoy later! So be warned, if you are counting on having some left to treat yourself later in the week, you had better make some extra and hide it in the back of the fridge.

Pair it with these Olive Parmesan Pretzel Bites or use it as a spread for sandwiches. However you choose to enjoy it, this dip is sure to be a smash with any crowd!

If you love serving dips, this delicious Tuna Dip is another great one for parties. It's similar to a crab dip, but a lot less expensive while still being really tasty!

    🧂 Ingredients Needed

Overhead shot of ingredients - lime juice, parmesan cheese, bouillon cube, shredded cheddar, sour cream, cayenne pepper, chipotle powder, salt, garlic powder, and onion powder.
With only a few simple ingredients, you will love how easy it is to make this chipotle cheese dip!
    • bouillon cube - it may seem like an odd choice, but adding vegetable bouillon infuses this chipotle cheddar dip with a fantastic savory flavor.
    • sour cream and mayo - these two ingredients form the base of this dip and give it a creamy and indulgent texture.
    • cheese - combine Parmesan with shredded cheddar cheese for the perfect pop of cheese flavor.
    • seasonings - I use chipotle powder alongside garlic powder and onion powder for lots of flavor.
    • sugar - helps balance out some of the saltiness with a hint of sweet.
    • lime juice - cuts through the heavy, savory dip with a pop of citrus.

    🔪 Instructions

Overhead view of process shot 1 - crushing bouillon cube into powder.
    • In a mixing bowl, crush the bouillon cube with the back of a spoon or fork.

    • Give it a good mix until it comes together, then chill and serve!

    ❔ FAQs

    What is chipotle powder?

This powder is made by first smoking jalapenos or chipotle peppers over a natural wood fire, then grinding the peppers. It typically has a deep red color and a deliciously smoky flavor.

    Is chipotle spicy?

Yes, chipotle powder has a bit of a kick! Feel free to adjust the amount in this chipotle cheese dip until you reach the amount of heat you like.

What should I serve with chipotle cheddar cheese dip?

Serve your dip with pretzels, tortilla chips, crackers, pieces of bread, or fresh veggies. It pairs well with just about anything! You could even use it to add some flavor to sandwiches and wraps, or mix a couple of spoonfuls with a drizzle of oil to create a unique salad dressing.

Enjoy this creamy and delicous chipotle cheese dip with veggies, crackers, and chips of your choice!

    💭 Expert Tips and Tricks

    • You can serve this dip right away, but it tastes even better if you give it a couple of hours to sit in the fridge so the flavors can develop!
    • Feel free to double or even triple this recipe if you're looking to feed a larger crowd or want leftover dip to keep around.
    • Start with a smaller portion of the seasonings, especially the chipotle powder, and give the dip a taste once you're done mixing it up. Continue adding seasonings as needed to reach a flavor you like.
    • For a super smooth texture, an electric mixer or food processor can be used to mix this dip.

📌 Creamy and delicious with the perfect kick of heat, this chipotle cheese dip is your new favorite 5-minute appetizer recipe!

    💡 Substitutions and Variations

    • I recommend using sharp cheddar cheese for best results, but you could also use a different variety of shredded cheese like pepper jack or a Mexican blend.
    • Substitute Greek yogurt for the sour cream for a slightly lighter version of this dish.
    • Top with chopped green onions, a sprinkle of chipotle powder, black beans, diced tomatoes, cilantro, chives, diced red bell peppers, or a dollop of sour cream.
    • For a smoky flavor without as much of the heat, use smoked paprika for some of the chipotle.
    • Give this dip an even thicker texture by adding a bit of cream cheese or some tomato puree.
    • Another way to add flavor and heat to this dip is by mixing in some adobe sauce, which is also made with chipotle.

    🥫 Storage

Keep your dip covered in the fridge, where it'll last for 3 to 4 days (if you don't eat it all up first!)

I don't recommend freezing this dip, as the texture might become grainy when you thaw it and the flavors might not be quite the same.

🍴 What To Serve With This Dish

Can't get enough snacks? Pair your chipotle cheddar cheese dip with these Chipotle Lime Roasted Peanuts, or bring in something sweet like Oatmeal Banana Cookies or Cinnamon Sugar Soft Pretzels!

    Instructions

    • Crush the bouillon cube into a powder with a fork or the back of a spoon.
1 chicken or vegetable bouillon cube
    • Add in the sour cream and mix thoroughly until the bouillon powder is completely incorporated.
      8 ounces sour cream
    • Add the remaining ingredients and mix thoroughly.
3 tablespoons mayonnaise, 3 tablespoons grated Parmesan cheese, 2 ½ tablespoons shredded cheddar cheese, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon chipotle powder, 1 teaspoon sugar, 1 tablespoon lime juice
    • Garnish if desired (paprika and cilantro are good choices) and serve with chips or crackers.

    Notes

    • While this can be served immediately, for the best results, put it together at least 4 hours ahead of time and store in the refrigerator to give the flavors time to meld.
    • Use sharp cheddar shredded cheese for the best flavor.
    • Taste test and add more seasonings if needed.
    • If you want a really smooth texture, use a hand mixer or food processor to blend.
    • Some other suggestions for toppings are diced tomatoes, green onions, or a dollop of sour cream.

I took your advice and added a little bit of olive oil to this and used it as a salad dressing. It was so good the kids were begging for seconds on salad!
