    Just pop all the ingredients in, turn it on, and let it cook. The tender pork paired with tasty potatoes and melty cheese all makes for a fantastic dinner, and the leftovers can be eaten for breakfast the next day!

    I love cooking pork chops in the slow cooker, like for my Pork Chops with Mushroom Soup! It yields perfect results every time, and the hands off cooking frees up time in the evening.

    🧂 Ingredients Needed

    • shredded cheese - shredded cheddar cheese is my choice here, but feel free to switch things up.
    • pork chops - the star of the show, you can use either bone-in or boneless chops for this recipe!

    Yes! As long as you fully cook the pork chops, there are no dangers to putting raw meat in a slow cooker.

    Do bone-in pork chops take longer to cook?

    Typically, bone-in chops will take a bit longer to cook than boneless pork chops. Take this into account when setting an initial cooking time, and be prepared to let them go a little longer if they need it!

    Ingredients
     

    • 29 ounces diced tomatoes (two 14.5 ounce cans)
    • 4 cups frozen hash browns
    • 1 ½ teaspoons chili powder
    • 1 ½ teaspoons cumin
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • ½ teaspoon cayenne red pepper
    • 2 cups shredded cheddar cheese
    • 1 ½ pounds pork chops (bone-in or boneless)

    Instructions
     

    • Combine all the ingredients except the pork chops in a large bowl and mix well.
      29 ounces diced tomatoes, 4 cups frozen hash browns, 1 ½ teaspoons chili powder, 1 ½ teaspoons cumin, ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon cayenne red pepper, 2 cups shredded cheddar cheese
    • Season the pork chops with some salt and pepper and arrange in the slow cooker.
      1 ½ pounds pork chops
    • Top the pork chops with the hash brown mixture and cover.
    • Cook on low for 6 hours.
    • Stir well, and then serve with some additional cheese on top if desired.

    Notes

    • An optional step is to sear the seasoned pork chops in a hot skillet before placing them in the slow cooker. This step enhances the flavor by creating a nice crust.
    • Mix in corn, beans, or even chunky salsa if desired.
    • Add vegetables like bell peppers, onions, and mushrooms for extra flavor and texture.
    • Garnish the casserole with fresh herbs like parsley or cilantro before serving for a burst of freshness.
    • Store any leftover casserole in an airtight container in the refrigerator. 
    • Reheat the casserole gently to avoid overcooking the pork chops. A microwave at 50% power or reheating on the stovetop works well.
