    Potato Crusted Cod

    Potato Crusted Cod uses potato chips to create an easy crunchy coating for cod fillets. This meal comes together quickly for a delicious family friendly weeknight meal!

    👩🏻‍🍳 Recipe Back Story

    I love this recipe for a couple of reasons. The first and foremost being that it gives me an excuse to buy potato chips! As a close second, it is a great way to get my kids to eat fish and actually like it! My mom used to make Potato Crusted Cod for us when I was growing up and we all loved it.

    Not sure your kids will love it? Well, my hard-to-please child eagerly gobbled it up and asked me to make it again! Yeah!!

    🥘 Ingredients Needed

    With these simple ingredients, your potato crusted cod is super easy to prepare.
    • cod - fresh or frozen
    • Caesar salad dressing - to coat the fish
    • potato chips - adds a crispy, tasty topping!
    • shredded cheddar cheese - reduced fat works!

    🔪 Instructions

    With these four simple steps, your potato crusted cod will be ready in no time!
    1. Crush the potato chips and add with shredded cheese in a bowl.
    2. Thoroughly mix the chips and cheese.
    3. Coat a baking sheet with non-stick cooking spray, or use parchment paper, then lay the fillets on top and brush with the salad dressing.
    4. Top the fish with the chips/cheese mixture, pressing down to adhere.
    5. Bake in a preheated oven until the fish flakes easily with a fork.

    💭 Top Tips

    Fish is best when fresh, so be sure to use it the day it's unthawed or purchased.

    The potato chips you use really flavor the dish. I recommend plain potato chips for good salty flavor. However, salt and vinegar chips would give this a more traditional fish 'n' chips flavor!

    For best flavor avoid using a cheese flavored chip. But if that's all you have on hand, I recommend swapping the dressing for a little olive oil or mayonnaise.

    👪 FAQs

    What if I can't find cod?

    You can certainly substitute any type of white fish - halibut, tilapia, flounder, bass, or haddock - all would work!

    How do I know the fish is fresh?

    Choose fillets with a pinkish tint, there should be no fishy smell and it should appear dense and firm.

    Is frozen as good as fresh?

    Often times most fish is frozen by the time it gets to the market, so frozen is a great and often more affordable choice!

    How do you thaw it?

    The best way to thaw the cod is to lay it on a bowl filled with ice and allow it to thaw completely in the refrigerator. The length of time it takes to thaw the fillet depends on how thick they are.

    There are definitely some specific things you can do to make sure your fish is delicious and safe to eat. If you don't handle seafood much, it's always a good idea to take a minute and get some additional information on selecting and serving fresh and frozen seafood safely!

    Sometimes it's hard getting your family members to eat fish and seafood. Do you have that problem too? It seems that some have issues with the texture or smell.

    That's why potato crusted cod is a great dish to start with! It's the magic of potato chips. Adding good salty goodness and crunch it makes for a tasty dish!

    Fish and chips is traditionally served with coleslaw, I love my ramen noodles version but if you prefer traditional coleslaw, this recipe looks delicious!

    Of course the other part is the "chips" and we all love fries! Baked dill fries go perfect with this meal too, though crispy baked green beans would be a super fun switch-up!!

    Ingredients
     

    • 1 cup crushed potato chips
    • ½ cup shredded cheddar cheese (I used reduced fat)
    • 1 pound cod, or other mild white fish (fresh, or frozen and thawed)
    • Caesar salad dressing (I used a light version)
    Prevent your screen from going dark

    Instructions
     

    • Preheat oven to 500 degrees.
    • Combine the crushed chips and cheese in a bowl.
      1 cup crushed potato chips, ½ cup shredded cheddar cheese
    • Place the fish on a baking sheet coated with non-stick cooking spray or parchment paper, then brush with a generous dollop of the dressing.
      1 pound cod, or other mild white fish, Caesar salad dressing
    • Top the fish with the chips/cheese mixture.
    • Bake about 8-10 minutes until the fish flakes easily with a fork.

    Notes

    • Note that you can also use flounder, tilapia or any mild, white fish in place of the cod.
    • Cook this dish the day you buy the fish (if fresh) or the day you thaw it (if frozen) for the best taste.
    • I usually use plain potato chips, but you can experiment with different types! Salt and vinegar chips or kettle chips would be great, or try reduced sodium if you are watching your salt intake. 
    • Cheddar or sour-cream flavored chips might not work well with the Caesar dressing, but you can substitute a little oil or mayonnaise for the dressing if you want to try them.
    • Test the fish with a fork when you think it's done. If it flakes easily, you are good. FIsh cooks quickly, so try not to overcook!

      A neighbor gave this recipe to my mom years ago. I've actually converted non-fish people with this recipe. I use sour cream and onion pringles and found a swiss/gruyere (colby/jack ok)shredded cheese(Private Selection at kroger) and ALWAYS use CARDINI's original caesar dressing per original recipe. There is something about the seasonings in Cardini's dressing that just makes this recipe right.
