I have been on a big couscous kick lately.

To me, one of the best flavor combinations ever invented is peanut butter with chocolate. Something about the two flavors goes together so well; the salty nuttiness and the bitter sweetness blend together into a concoction similar to heaven. Happy Saturday, everyone! I am so glad the work week is over and I get a chance to catch my breath. Things have been so busy, but the biggest factor is that work has been requiring a lot of my mental energy, which is a bit draining (there is only so much to go around LOL!). So I am looking forward to slowing down a bit for a couple of days!

Last weekend we took a road trip to visit my parents and have a little family reunion at Kennywood Park, which is an amusement park in southwestern Pennsylvania. It is one of the BEST amusement parks ever, in my opinion. (more…)

The warmer weather has me feeling a little tropical these days. Especially since it has been a bit humid here as well! One Sunday morning a couple of weeks ago, I was craving a breakfast a little on the exotic side. I went through my options: cereal, eggs, French toast, waffles, pancakes…all of them left me feeling ‘eh‘. Then I looked in the pantry and saw a can of crushed pineapple just sitting there. It was practically yelling ‘You should cook something with ME! You want something sweet and tart and fun!!’ And do you know what? That can of crushed pineapple was right!! (more…)

You can never have too much shrimp. I always keep a bag of them in the freezer. I love how they cook so quickly and pair well with so many different flavors! They add lean protein to the meal and the kids love them. We are lucky that no one in our family has a shellfish allergy, but obviously you want to be careful if you are giving shrimp to a child for the first time.
I remember the first time I gave Thing 1 some shrimp to try. He was probably around 6 years old. He asked to try it (he actually likes to try new foods!). I was rather disappointed when he liked it, because then I had to share! (more…)
Here’s a great recipe for those crazy evenings when you need something quick and easy. I love the lemony creaminess of the sauce that this creates. It doesn’t look all that pretty, but boy does it have a lot of flavor! Pair it up with some whole grain noodles and a side veggie and you have an awesome, hot, homemade dinner on the table in minutes! (more…)
Pasta, pesto…and presto! You have a great dinner that everyone loves. The pasta and pesto combination cannot be overdone, in my opinion. I could eat it every day! That being said, I still love coming up with other add-ins to keep it interesting. This time I was in the mood for snow peas. (more…)
