I love to grill sandwiches for dinner. Easy prep + delicious meal + easy clean-up = streamlined, more relaxing evening for everyone!
For a long time, plain ol’ grilled cheese was a weekly staple in my house. Then a few years ago, I started to get a little more creative with the grilled sandwiches. (more…)
Snack food for dinner?!? Sign me up! These quick and healthy chilaquiles are made with tortilla chips! Wa-hoo!
Plus, ‘chilaquiles’ is so much fun to say! Try it! Chee-la-KEY-lays. Chee-la-KEY-lays. Chee-la-KEY-lays.
OK, so I am easily amused. But that does not take away from the deliciousness of this dish. You may be wondering, how can a recipe that includes a snack food be healthy? (more…)
Stop the presses!!! Cheesy Chicken and Rice got a rating of …. drumroll please….
4.5 Hershey bars out of 5! From Thing 2! AMAZING!
When I find something that Thing 2 really, really likes, it makes me so happy, because it doesn’t happen all that often. So of course I have to share it! Before we get to the recipe, however, I wanted to share this song/video as we move into the tail end of Lent.
Imagine fresh, firm shrimp in a creamy, buttery sauce bursting with the tangy flavors of lime and cilantro. Sounds like something you might get in a nice restaurant, but you can actually make this at home quickly and easily! And the best news…your kids will love it too!
This recipe was adapted from one that I found (more…)
I made this Sausage and Bell Pepper Stew a few nights ago. I was really in the mood for a glass of wine, and this recipe calls for 1/2 cup of it, so making it gave me the perfect excuse to open a bottle. I had such a nice time slicing the peppers and browning the sausage, while sipping a glass of wine, humming along to the radio, and frequently glancing happily at my brand new kitchen wall clock!
I am so happy to finally have a kitchen wall clock that I really like. (more…)
Kids love food on buns. I am not sure if it is because they get to eat with their hands, or because they love the bread (which I am sure is Thing 2′s main motivation), but if I can put a new food on a bun, I can usually get the kids to try it with an open mind. So when I saw a recipe for a crab cake burger that looked easy enough for a weeknight meal, I thought it would be the perfect way to introduce them to the wonderful world of crab! (more…)
Lots of people love soup. I am not really on that wagon, but kind of dallying behind it. I enjoy soup if someone else makes it, but I don’t usually have enough of a craving for it that I would make it myself. However, every once in a while, a soup comes along that makes me think to myself ‘I really should make some soup one of these days!’ (more…)
“Mom, why is it that all of the snacks that taste good are bad for you?”, Thing 2 asked me, just the other day. Of course, he was not talking about fruit or yogurt or carrot sticks. Those are OK in his mind, but the snacks he really likes are the junky ones. The crispy, salty, munchy kind.
“Well, my darling child,” I replied, “Sadly, it is true that many of the snacks that you really like are not good for you. However, what if I could give you a something that tastes like a crispy, salty, munchy snack AND is actually nutritious?”
Thing 2 indicated that he would be interested in such a snack. Great! (more…)
A giveaway?!?! Hooray! I decided to do a giveaway to celebrate my birth month, March. Yes, I like to celebrate my birthday for a whole month! Why not, right?!? If I have to notch up that age count by one, I might as well make it fun! Plus, as a breast cancer survivor, every birthday is a big deal. I don’t mind getting older one bit, because for a while I was not sure I would get that opportunity! But, before we get to the giveaway, let’s talk turkey. Er, I mean chicken.
I serve chicken a lot. There are many reasons…it is relatively healthy, it is a good source of protein, it’s affordable, the kids like it, it’s versatile and easy to cook…I could go on and on! (more…)
