I wrote about this recipe only a few weeks ago (click here to see original post), but I just made it again and did some things differently, mostly because I was really pressed for time and needed to take some additional short cuts. Well, everyone thought the end result was even MORE delicious! So I want to feature it again to highlight the changes I made. I know I have featured quite a few meatless entrees in recent posts. Lent always gets me thinking about meatless dinners.
If you are not Catholic (or even if you are), you may not be aware of the true purpose behind abstaining from eating meat on Fridays during Lent. One misunderstanding is that it is supposed to be a sacrificial practice, and therefore people wonder how it makes sense to be able to eat lobster or other delicious seafood on Fridays in Lent instead of beef or chicken. I must confess.
I used to resort to serving things like frozen chicken nuggets and macaroni and cheese, and other not-so-nutritional-but-easy-to-prepare options on the craziest days of the week. There, I said it. Whew!
I didn’t do that with every meal, but definitely more often than I should have. Why? Well, at the end of a busy and exhausting day at work, I would open the fridge, stare at the contents, and ask myself the age-old question: ‘What’s for dinner?’ (more…)

“What’s for dinner, Mom?” the kids ask.
“Fish,” I reply.
“Hooray!!” they cheer.
HA! I don’t know about you, but that is NOT how it typically goes in my house when we have fish for dinner. Part of that is probably because I haven’t served much fish over the years. But that is about to change!! As I am getting more into cooking and trying to eat healthier, I find myself looking for good fish recipes that the kids will actually like. And I found a winner with this tilapia dish! Even Thing 2 (the hard-to-please one) enjoyed this! And DH said that he would like me to make this again. “Hooray!!” I cheer. (more…)

I always listen to music in the kitchen. It drives my husband crazy, because I like to have the radio on all day long on the weekends (he likes it a little more quiet…not sure how he survived the toddler years LOL!). Anyway, I just heard this song, and it is my new favorite! It is not a new song, and I have heard it before, but I just actually paid attention to the lyrics and they are really clever and funny! And the video is cute, too!

We have all had them….‘one of those days’. Yesterday was ‘one of those days’ for me. First of all, it was Monday, so right off the bat it wasn’t starting out great. I had stayed up later than usual watching the SuperBowl (although threw in the towel after the 3rd quarter), so getting up in the morning was REALLY tough. It was an exhausting and seemingly unproductive day at work. Then, I had the usual whirlwind afternoon of picking up the kids at different times from different activities and dealing with rush hour traffic. (more…)

I just made this awesome dip in preparation for the food fest later today also known as the SuperBowl.
No matter which team you are cheering for, you have to have munchies around for the game! I love crackers with creamy dips, and this recipe allows me to enjoy them without feeling so guilty later.
For families, you can ease up on the jalapenos, but I really like this dip to have a little bite in it so I added some extra! The kids will just have to stick to the sour cream and onion dip this time! (more…)
