Ever have a REALLY busy evening with even less time than usual to prepare and eat dinner? It happens in my house all the time. In the past, we would sometimes resort to fast food because I just couldn’t figure out how to fit it all in. I won’t claim that we NEVER stop for fast food anymore, but I avoid it more often than not these days by keeping a few super-easy and quick recipes in my arsenal.
There are only a few ingredients and a few steps in this recipe, which is great for those days where time is of the essence. And, you can shop wisely and increase its nutritional value by choosing extra lean roast beef and whole wheat hoagie rolls. The big advantage to this recipe is that it is QUICK and my kids LOVE it (as well as my husband). Serve it with a side salad or steamed veggies (how did we ever live without frozen veggies that you can microwave right in the package?!?), and you have a decent meal for one of those dizzy-busy evenings.
My kids actually say ‘hooray!’ when I announce that we are having the dripping roast beef sandwiches for dinner. That is an accomplishment, since it is not all that often that I find something that they both want to eat!
- 2 cans Campbell’s condensed French onion soup
- 2 tbsp reduced sodium Worcestershire sauce
- ¾ lb thinly sliced deli roast beef
- 4 soft hoagie rolls with sesame seeds
- 4 slices deli provolone cheese cut in half
- ¼ cup drained mild or pickled banana pepper rings (optional)
- Heat oven to 400 degrees.
- Heat soup and Worcestershire in 2 qt saucepan over medium high heat to a boil.
- Add beef and heat through, stirring occasionally.
- Divide beef among rolls.
- Top with cheese slices and place sandwiches onto baking sheet.
- Bake 3 min or until sandwiches are toasted and cheese is melted.
- Spoon soup mixture onto sandwiches.
- Top each sandwich with 1 tbsp pepper rings (optional).
- Place remaining soup mixture in shallow bowls for dipping.

Dizzy Busy and Helpful Tip #1:
If your stored brown sugar gets hard as cement, dampen a paper towel and place it on top of the brown sugar in a microwavable container. Then microwave a little bit at a time until the brown sugar is soft again! I have used this trick, and it works!
