Chicken Curry

Dinner time? Don’t worry! Try Chicken Curry in a Hurry!

I wasn’t planning to write about this recipe quite yet, but I made it the other night and it was a big hit, so I decided to move it up in the batting order.  Even my picky eater liked this dish!  That REALLY surprised me, because even though he likes chicken, curry is a departure from the usual type of thing that he likes.

 

I adapted the recipe from the original version that I found on Cozi.com.  The biggest change is that I substituted canned green beans for fresh or frozen.  Why would I do that?  I will illustrate with this conversation:
Child: “What’s for dinner, Mom?”
Me: “Pork chops, mashed potatoes, and green beans.”
Child: “Green beans?!?”
Me:  “Yes, green beans.”
Child:  “Are they the good kind, from a can?”
And there you have it.  In my household, the good kind of green beans are the kind from a can.  *Sigh*
OK, so they while they may not be the greatest judges as to what constitutes ‘good’ in the veggie department, they know what they like, and I try to use that as my basis whenever possible to give maximize my chances of achieving dinner success!

The other adjustment’s purpose was really to make my life easier.  I substituted instant rice for regular.  Actually, I ended up mixing half instant white rice and half instant brown rice (because that was all I could find in the pantry!).  It worked out really well, so I may do it again, or try using all brown rice.  You can also use regular rice, but then you just need to give yourself more time to cook it.

Chicken Curry in a Hurry

Adapted from a Cozi.com recipe
Ingredients
2 cups uncooked instant rice (can use brown or white or a mix)
1 can (14.5 oz) green beans, drained
1 tablespoon olive oil
2 skinless boneless chicken breasts, cut into bite size pieces
2 teaspoons curry spice (add more or less depending on your taste)
1/2 teaspoon salt
1 cup coconut milk (shake it before using)
Directions
1.     Bring 2 cups of water to a boil, add instant rice and cook according to package directions.
2.     Heat the olive oil over medium heat. Add the chicken pieces and sprinkle curry spice and salt over chicken. Saute until chicken is cooked through, 5-8 minutes.
3.     Add the cooked rice, green beans and coconut milk to the chicken. Heat, stirring, for one or two minutes until warm.

  1. Great recipe and nice blog! Have you ever tried Trader joes frozen brown rice? It is awesome and it cooks in 3 min in the microwave!
